Fix server build: add zod to noExternal to prevent tsdown error

tsdown v0.20.3 errors when it detects undeclared dependencies in the
bundle. Since @t3tools/contracts (already in noExternal) transitively
pulls in zod, explicitly declare it to avoid the build failure.
