test(opencode): add pending-snapshot evidence driver for #19228

Replays recorded OpenCode 2 fixtures through OrchestratorV2 and records
the adapter's provider_thread.updated snapshots per native thread, since
pendingBackgroundWork does not reach domain events at this head.
