fix(desktop): evidence capture fails when the recording is missing or truncated

The capture fixture reported completion even when ffmpeg died early or left
no playable file. Check the recorder during observation, require a clean
SIGINT exit, and ffprobe the mp4 for at least --seconds of duration before
emitting capture completed.
