Show the app off in the README, with screenshots

The README now opens with the icon, a one-line pitch, badges (latest
release, platforms, Rust + Tauri, bring-your-own-key AI) and a screenshot
of the Smart Inbox, then a feature list and a gallery: +AI Summary, Write
with +AI, the calendar, the meeting pop-up, invitations and the command
center. Each screenshot comes in light and dark; GitHub picks the one that
matches the reader's theme, and GitCafe, which drops <picture> sources,
shows the light one.

The screenshots are of the demo mailbox, taken at 2x in the browser
preview of the built UI. A new AI section covers Settings -> AI, the
summary styles and their shortcuts, quick replies, the composer's +AI, and
what is sent to the provider. The README ends with a note that spark-rs
isn't affiliated with Readdle.

assets/social-preview.png is a 1280x640 card for the GitHub repo's social
preview, which has to be uploaded in the repo settings by hand.
