fix(insights): drop o1-preview and o1-mini from OpenAI model discovery (#377)

Exclude o1-preview and o1-mini snapshots from OpenAI model discovery: neither supports json_schema structured outputs, so choosing them results in an immediate HTTP 400 request failure.
