Drop rust-docs from the CI toolchain

Build up from the minimal profile plus the components the build actually
uses instead of the default profile, which bundles rust-docs. Cuts 786MB
unpacked and its tarball fetch from the build closure, taking the whole
thing from 5.3GB to 4.1GB.

```
