Align `"..."` documentation for file pattern settings (#64452)
## Objective
Make the `"..."` convention easier to understand across the settings
that support it.
This is a meta follow-up to
[#64399](https://github.com/zed-industries/zed/discussions/64399),
establishing a documentation pattern that subsequent PRs can follow.
## Solution
Give each setting a succinct, self-contained explanation of `"..."`,
with matching wording and examples in its Rust doc comment and settings
reference:
- `file_scan_exclusions` • #62769
- `file_scan_inclusions` • #64440
- `read_only_files` • #64222
This keeps the explanation consistent across both surfaces and aligns
the content for future documentation generated from Rust comments.
## Testing
Built the docs locally on macOS and verified the examples, links, and
anchors. The existing settings merge tests pass.
