Add desktop perf seed data and update perf trace workflow

- add `apps/desktop/scripts/perf-seed.json` for seeded desktop perf automation runs
- update desktop/web perf automation and trace scripts to use the new seeded flow
- refresh workspace task/dependency config (`turbo.json`, `apps/web/package.json`, `bun.lock`) to support the perf tooling changes
