Make the quick start honest for nfcapd users (nfdump fork build,
--nfdump, bounded first import), trim datasets.json.example to the
three required fields, lead with a minimal dataset example, explain
field semantics, and add a troubleshooting page keyed on the errors
a first setup actually hits.
